"ou guys who live in south brooklyn, who crave the delicious Broth and Noodles, but don't want to brave the cold to go all the way to Chuko only for there to be a 2 god damn hour wait, or, don't want Chinese hand-pulled or Pho. Tokyo-Ya is a great little ramen house in our corner of brooklyn. They are new and if you aren't paying close attention to the sign, you could miss it - only says Tokyo-Ya in english once and it's in small letters. The service is very friendly- tea when you sit down, they check on you frequently, though you may have to ask for water not unusual. When you get the check, some gum comes along with it. They have a wonderful wonderful pork bone broth ramen that hits the spot. To me, broth is probably the single most important part of a bowl of ramen to me, and this has that creamy, savory, pork-boney flavor, DOWN! The noodles themselves were also pretty wonderful--yellow, springy, chewy. I think though the flavor is reminiscent of a great ramen place like Ippudo, Totto, or chuko, it's possible that the broth might get better over time and develop a little more depth of flavor. PS. Not salty enough for you use the soy that's on the table. hallo!!! The reason I give this a 4 and not a 5 is because I think there is some room for improvement on the toppings-- though I loved the wood ear mushrooms, flavor of the egg, and scallions -- not crazy about the chashu roast pork slices though my boyfriend was, just felt they could be maybe more buttery textured, more smokey, perhaps...more...bellyfat... and slightly thinner sliced. It comes also with nori and naruto fish cake but since I'm not a fan of either anywhere, took them out. They used choy good and snap peas which I like but don't associate with ramen necessarily- the springy taste of the peas competed with the broth, instead of complimenting it. They could incorporate things like corn, garlic, and the whites of the scallion. AND, though I'm aware there's debate over the subject, I prefer my egg to be a little softer on the inside. But I'm splitting hairs here. The broth and the noodle are what matter most. And they're great. All in all, Tokyo-Ya beats so many other places in Brooklyn, and it's in our neck of the woods, so I'll be back, a lot. and OH! And it's cheap dudes. Ramen for two, plus pork buns and a can of soda = $18.25. WHUUUUUT!!! EVERYONE go there now. Because I'd hate for them to go out of business!!"
